This recipe is similar to yesterday’s Thumbrint Jam Cookies, but using lemon instead of raspberry and of course a different shape. The recipe comes from the epicurious website but is taken from the December 2011 issue of Bon Appetit. These cookies are small, we made 51 cookies. Following the instructions, after rolling the dough into plastic wrap we inserted the dough into a paper towel roll. Although, not completely round, the cookies were rounder than if we had tried to roll ourselves.Not surprisingly, the taste is lemony and fresh.
